They make sure they pay between 30 and 150% more than the ‘going rate’ for their green coffee, meaning the farmers are paid more for their crops.
This in turn leads to the opportunity of better living conditions and, potentially an even better harvest.
A single origin coffee from Consuelo Torres, located in the San Antonio Huabal region of Peru. Grown at 1820 metres above sea level, this washed coffee is oh so creamy with bags of dark chocolate and a cherry-like acidity as you drink.
Hand Roasted in Small Batches
Tastes Like: Find bags of creamy dark chocolate which only gets creamier as it cools. A cherry-like acidity lingers as you drink. It’s the bee’s knees.
How to Brew: While this coffee tastes awesome in every device, its favourites are an espresso machine, Aeropress & moka pot.
Behind the Scenes:The district of Huabal can be found within the Jaen province of Cajamarca, Peru. Huabal has massive potential to produce amazing coffees and, with ongoing knowledge and resources, the coffee scene will grow for farmers in this region for years to come.
Consuelo Torres Sanchez owns two hectares of land in San Antonio, Huabal. He picks & processes the coffee cherries himself, washing & floating the coffee before pulping the same day. This coffee is then fermented for 24 hours before washing & drying. This particular coffee dries for 10-15 days in full sunshine.
Huabal district spans over a couple of mountains, and, the climate and soil conditions can vary. Growing conditions can be very wet and humid, and at other times very dry and hot. This, however, leads to diverse and complex coffees with great profiles on the cupping table.
Roasting: At Two Chimps, they hand roast coffee. They use the roasting process as a way of showcasing the natural flavours and aromas from the coffee. If a particular coffee is roasted too dark, these flavours and aromas will be lost, and instead, you will find burnt and bitter notes. Because their coffees are of such high quality, they don’t need to roast darker to hide any bad flavours. All of their coffees have a natural sweetness, and they give this sweetness room to shine through.
Each coffee has an individual and unique flavour. Some have notes of chocolate, while others can be more fruity for instance.
