A naturally processed, single origin coffee from Sitio Banderia Brance, Brazil. Grown at 1800 metres above sea level, this coffee is syrupy with a creamy body and a soft cherry-like acidity as it cools.

Behind the Scenes:Thiago Dutra’s father bought the farm of Sitio Bandeira Branca in 2004, initially to raise dairy cattle. As the years passed, the dairy industry in Brazil became harder and, when Thiago was a little older in 2016, he and his family made the decision to change their farm from dairy to coffee. The sale of milk purchased their first coffee trees. The cows were then sold to pay off any debts outstanding.
Ready to take on the coffee world, Thiago and his three sisters taught themselves how to grow coffee and, more importantly, how to do it successfully. Their aim was to grow the best coffee and to have the highest attention to detail throughout the whole process… And that they did, and still do. With their very first harvest, they produced a speciality grade of coffee!
At Sito Bandeira, many varietals are planted, including yellow bourbon (like this coffee), yellow catuai and topazio. Once picked, this naturally processed coffee is dried on patios for two days, before being moved into boxes to continue drying for a further nine days.
Roasting: At Two Chimps, they hand roast coffee. They use the roasting process as a way of showcasing the natural flavours and aromas from the coffee. If a particular coffee is roasted too dark, these flavours and aromas will be lost, and instead, you will find burnt and bitter notes. Because their coffees are of such high quality, they don’t need to roast darker to hide any bad flavours. All of their coffees have a natural sweetness, and they give this sweetness room to shine through.
Each coffee has an individual and unique flavour. Some have notes of chocolate, while others can be more fruity for instance.
